Vegan Samoa Recipe (March Madness Champ)

For those who followed my March Madness bracket, this recipe won the entire competition. She's a stunnah!


R E C I P E


ingredients:

1 cup unsweetened coconut

1 cup dates — I like those medjool dates from @traderjoes — they are gooey (sometimes I get dates from market basket & they’re tough & not as luscious so I have to soak them in water beforehand)

1/3 cup dairy free chocolate chips

1/2 teaspoon coconut oil or olive oil


directions:

  • Preheat oven. to 450°

  • Toast coconut - separately & watch like a hawk.

  • Once golden brown, add toasted coconut & dates to food processor mix until it becomes a paste

  • Form into Samoa shape or ANY shape.

  • Freeze for 20/25 min.

  • Then, melt coconut oil or olive oil with chocolate (in microwave with 30 second intervals or on a double boiler.)

  • Drizzle fo shizzle that chocolate like Snoop Dogg.

  • Freeze again, eat.
