
Lemon Squares
This was my Papa's favorite. Also my favorite after field hockey games. My friend's mom, Lisa, made them basically every game, and I must have had at least 4 squares after playing. Not the best for tummy aches, but certainly worth it. After I stopped playing, I was lucky enough to receive THE recipe. This is that recipe. Thank you Lisa Towers!
ingredients:
CRUST
2 cups flour
1/2 cup powdered sugar
3/4 cup butter
LEMON FILLING
1/2 cup flour
1/2 teaspoon baking powder
4 eggs beaten
2 cups white sugar
1/2 cup lemon juice (fresh)
directions:
Preheat the oven 350 degrees.
Use a pastry blender to form together the flour, powdered sugar and butter - should be crumbly when finished
In a 9 X 13" pan, press down dough into pan
Bake crust for 20/25 minutes.
While the crust is baking, mix together the flour and baking powder in a bowl, set aside.
In a separate bowl, beat together to eggs, sugar, and the lemon juice.
Once combined, stir in the flour/baking powder mixture
Pour lemon mixture on top of crust.
Bake for another 25 minutes
Top with powdered sugar!
