We decided to try to make some perfect-like bars ( because I'm literally obsessed with those things.) My sister & I hiked Mt. Washington the day after I made them, and we brought some along. They ended up getting squished in our backpacks, but they were oh so good. Be mindful when you are measuring the protein powder. They may have a protein powdery chalkiness if you use too much!
Here's my adaptation of another recipe.
ingredients: 1 1/4 cup almond flour
2 scoops vanilla plant based protein powder
1/4 teaspoon sea salt
1/2 cup almond butter
1/4 cup maple syrup
2 tablespoons honey
1 1/2 tablespoons coconut oil (melted)
1/4 cup mini chocolate chips (EnjoyLife)
Mix together wet ingredients - almond butter, maple syrup, honey and melted coconut oil.
Add dry ingredients and mix
Once combined it should look more like a dough and a batter.
Grab a loaf pan and line with parchment.
Add dough to pan and flatten with the back of a spoon. Add mini chocolate chips on top and flatten again.
Put in the freezer for a few hours.
Remove from freezer and cut into pieces. Store in fridge until eaten!
