
Flourless Chocolate Cake Recipe
This is a GO-TO recipe for me. It's SO decadent, SO easy, & I'm a chocoholic so it's everything I could ever need in this crazy world.

ingredients:
2/3 cup of chocolate chips of your choosing (I use a mixture of semi sweet/dark)
1 stick of unsalted butter
3/4 cup white sugar
3 eggs (farm fresh baby)
1/2 cup of cocoa powder (sifted)**
directions:
Preheat oven to 375 & line a 8" round with parchment paper
Grab your butter & chocolate and start melting together in either a microwave for 30 second intervals, or on a double boiler, mixing the entire time. Use a large bowl.
Once melted, remove from heat (or the microwave) and add in the sugar.
Whisk whisk whisk the sugar. It's going to look grainy. That's ok. Keep mixing.
After 2 min of mixing, start adding the eggs. ONE AT A TIME. Add egg. Mix until you can't see any of it, and then add another.
Once the 3rd egg hits, it'll start to become this beautiful, luscious, smooth texture. You're going to want to eat it then & there. Don't.
Then, add the cocoa powder. CAREFULLY fold. You don't know how many times I've gotten cocoa all over myself. **I know you probably don't sift, I usually don't. But this is a recipe that you should sift, just to get those little cocoa balls all evened out. If you don't want to sift, just take a clean hand and rub away those cocoa balls so you don't end up with dry spots in your cake**
Pour batter into prepared pan.
Bake for 25/28 minutes. It'll get crackled a bit on the top.
Let cool in the pan. It bakes in the pan for a little.
After 20 min cooling time, flip out of the pan & serve.
It's amazing with vanilla ice cream, or alone. I have the capability of eating the entire thing, but that's a talent. It's very rich so most people have a very little sliver. It's a versatile recipe, perfect for some classy dinner, or a quiet movie night at home.
