Coffee Coffee Cake ! (to be sung like Macho Macho Man)


So like I had never made coffee cake before this bundt. It made me think about that Sebastian Maniscalco skit about when company comes over, and your mom buys the Sara Lee crumble cake. It's a hilarious skit if you've never seen it. Linked below.

Anyways, coffee cake is so good. Here's the King Arthur Flour recipe with a few adjustments by yours truly.


R E C I P E

ingredients:

CAKE

8 tablespoons unsalted butter, softened

1 cup sugar

2 large eggs, room temp

2 cups flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon sea salt

1 cup sour cream or yogurt, at room temperature ( I use full fat greek yogurt)


INSIDE CRUMBLE 1/2 cup white sugar

2 teaspoons cinnamon

2 teaspoons vanilla

1/2 cup chopped walnuts or pecans


GLAZE

1 cup confectionary sugar

2 tablespoons milk

1/2 teaspoon vanilla


directions:

  • Preheat the oven to 350 degrees - prepare bundt cake pan with cooking spray

  • In your standing mixer, beat together the butter, sugar and eggs.

  • In a separate bowl, mix together the dry ingredients - flour, baking powder, baking soda and sea salt

  • Next, while the standing mixer is on low, alternate adding the dry ingredients with the yogurt. End with dry ingredients.

  • Now, make the crumble. Combine all ingredients in a bowl - don't be afraid to use your clean hands.

  • Now spoon half the batter into the pan. Add the crumble layer, and then spoon the remaining batter into the pan.

  • Bake the cake for 35-40 minutes. Use the toothpick test.

  • Let it cool for 15 minutes and then flip onto a plate.

  • While the cake is cooling, make the glaze. Mix confectionary sugar, milk and vanilla until smooth.

  • Once cake is cooled and flipped, drizzle the glaze all over that guy.
