Baby Vegan Lil Chippers

TWO bites. Everyone knows the rules. These are cookie dough stuffed with chocolate chips. They are the cutest lil things you ever did see. They do have quite a bit of effort involved, because you will literally wrap every couple chips with cookie dough. But for those who watch love meditative activities & or like to listen to The Rich Roll podcast while they bake, it's super easy! & trust me, THEY ARE WORTH IT.


R E C I P E


ingredients:

11/4 flour (can sub GF flour, or Whole Wheat Flour)

1/3 cup coconut flour

1/8 teaspoon of cinnamon (or more ;) )

1 stick of VEGAN Butter (I've been using Country Crock Avocado butter lately & loving it, Earth Balance is also fantastic)

1/2 cup white sugar

1/3 cup brown sugar

1/2 teaspoon sea salt

1 tablespoon ground flax seeds

2 tablespoons applesauce (unsweetened)

1 teaspoon vanilla

Dairy free chocolate chips (60 ish if they are big)


directions:

  • Whisk together dry ingredients in a large bowl- almond/all-purpose, cinnamon, & baking soda & salt

  • Ensure butter is ROOM TEMP

  • In a separate small bowl, mix ground flax seed & applesauce.

  • In the standing mixer, cream butter & sugars (white/brown) together

  • Add vanilla & then add flax seed/ applesauce mixture.

  • Once combined, add dry ingredients to wet ingredients. Mix until just combined. A dough should form.

  • Now heres the methodical part -- With CLEAN HANDS, take 1/2 teaspoonish of dough and roll it into a ball. Flatten the ball and place 1 chocolate chip (or a few chocolate chips) and then fold over. Roll the dough carefully around the chocolate and place on a cookie sheet with parchment.

  • Once all the balls are rolled - this recipe makes about 50 cookies -- chill for 20 min, just so they maintain their shape.

  • Preheat the oven to 400 degrees.

  • Bake the mini cookies for 7 minutes. They should be golden on the bottom.

  • Let cool before serving.
